- 西葫芦 (Xi Hu Lu) - Zucchini, 200g
- 鸡蛋 (Ji Dan) - Eggs, 2 pieces
- 姜 (Jiang) - Ginger, 10g
- 葱 (Cong) - Green onion, 20g
- 酱油 (Jiang You) - Soy sauce, 2 tbsp
- 香油 (Xiang You) - Sesame oil, 1 tbsp
- 盐 (Yan) - Salt, 1 tsp
- 白胡椒粉 (Bai Hu Jiao Fen) - White pepper powder, 1/2 tsp
- 饺子皮 (Jiao Zi Pi) - Dumpling wrappers, 20 pieces
Instructions
Prepare the Filling
Grate the zucchini and squeeze out excess moisture. Scramble the eggs and chop the ginger and green onion. In a large bowl, mix the zucchini, scrambled eggs, ginger, green onion, soy sauce, sesame oil, salt, and white pepper powder. Stir until well combined.
Wrap the Dumplings
Place a small amount of filling in the center of each dumpling wrapper. Moisten the edges with water, fold the wrapper over the filling, and press to seal, creating pleats along the edge.
Cook the Dumplings
Bring a large pot of water to a boil. Add the dumplings and cook until they float to the surface, about 5-7 minutes. Serve hot with your favorite dipping sauce.
